Save your box because All Clad Copper Core is flaky stuff
First off, to establish my kitchen-cred, we are modest foodies here and have 30 years use time on the vintage hard anodized calphalon, 18 or so years on a piece of all clad 3 ply, 6 or years use of another piece of all clad 3 ply, 15 years on various le cruset, a couple years on various staub, 5 or so years on calphalon 3 ply stainless, various lodge cast iron and carbon steel and of course the odd piece of revere ware and cusinart. In late Feb 2018, I decided to treat us to a new 14 piece set of all clad copper core and retire my vintage calphalon. The gear arrived and of course is beautiful. The heat transfer/response and weight is great and all that…But…..and to me it is a very big butt……the interior metal has started to flake off after minimal use!!!! ] I am verifying this using an eye-loop - there are small chunks missing, call them pot holes, in the metal surface. It is flaking off exposing internal metal surfaces!. Flaking off of the interior metal -in essentially brand new pans meant to last a lifetime. In all my experience I have never seen anything like this. Searching around I suspect this is the pitting condition I can now read about all over (just search the web on all clad pitting) with all the attendant scientific reasoning as to why it happens ..one post called it a stochastic process …well woop dee do..What it IS is a quality control problem at All Clad….While not exactly my field, I will speculate that it is most likely in the metallurgy of their re-mix of re-cycled metal because of the stated chemical component to this, but it might also be in the control of the thickness of the plated metals…or both…including general process contamination…Unbelievable in a such a vaunted top end made in America brand!Of my 14 pieces so far the 3Q saute, and DO have flaked to show the base metal. I have attached images…These pieces have the most use but still modest - less than 10x on each and all handled with TLC, no excessive heat, high acids or salts or Currys etc…and hand wash of course….The two sauces and the 12 in skillet and chef are also used and appear OK so far….At this time, All Clad sent me a shipping label to return one piece for an evaluation - we will see.I will say it again - All Clad has an extreme quality control problem the are passing off on their customers as being their fault - improper use and care.As of 10 May - 4 weeks after the start All Clad replaced my 3q Saute…I am holding on to the DO for now to see if it degrades…and to find a big box.update 2022 - well after the passing years of use....and regardless that they pit...and that i probably like the d5 more better - this stuff is really great.....as one poster said - it made for cooking and not for looking...it is fast and stable......really nice stuff...so to quote neil young - we had our ups and down but we're still playing together.

Fantastic Cookware Made in America
When my 'green' non-stick pans started flaking 2 years ago, I started to research alternatives to teflon and the 'green' alternatives, which don't hold up to my cooking very long. My research came up, finally, with All-Clad, and it topped my personal preference because it is made entirely in the United States. In Pennsylvania to be exact. In an age of Walmart deals and Costco bulk buying, I really try to make thoughtful purchases and buy American. Yes, All-Clad is expensive, hopefully because American workers are getting paid a living wage to craft high-quality cookware.I received one 8-inch fry pan for Christmas that year and it cooks like a dream! I have never had a problem with food sticking (as one reviewer mentioned) because I read the instructions. Specifically those that say to preheat the pan on low for a minute or two, and to regulate all cooking to low-medium settings in general. The pan heats evenly, quickly and spectacularly hot, I mean that's why we're all looking at copper right? So you don't need to crank up the gas to high to cook your eggs anymore. For the reductions that do cling to the bottom, well, I found that a quick soak with hot water before washing lifted the majority of the food remnants from the pan's surface. When I saw this set was on sale I snapped it up! I'm very pleased to be able to replace my Made in China garbage and all a lot sooner than I anticipated. My last tip is for anyone with hard water: after I hand-washed my pan I noticed white hard water salt stains remained even after I hand dried it. All you need to get rid of these is a little white vinegar and a dry cloth. Pour a little in the pan and rub it in/off with the cloth. The stains will be gone and the pan will look as new as it did out of the box.

Superb cookware
These are, I in my most humble opinion, the finest pots you can buy. They're solid, beautiful (if you're into pots) and well designed. If cooking is your passion, you can do no better. The internal copper core does an outstanding job of spreading the heat evenly and the interior and exterior stainless steel cleans up easily. The pots are even dishwasher safe although you may need to use copper polish to restore the bright finish of the exposed copper band if you do use the dishwasher. Please note, the pots won't do the cooking for you so if you have no idea what you are doing in the kitchen, you can still burn dinner or turn out a lousy meal...but at least you will have done it evenly and in style! On the other hand, because they cook so well, they could make learning to cook or expanding your cooking horizons a joy.A couple final notes. 1) The pots are heavy. All-Clad definitely did not skimp on the materials. Fortunately, for the heaviest pots, they have a secondary handle on the lip of the pot to help you lift. 2) They are expensive. I looked everywhere and could not find All-Clad discounted. Even retailers that carry the line are careful to exclude All-Clad when they have their big sales. That said, Amazon's price is as good as any, and with Amazon Prime, the pots were delivered to my door the day after I ordered them (all 54 pounds in one box) for only $3.99. 3) These are heirloom pots. I had a hard time reconciling paying so much for the set until I realized that we'll own these pots for the rest of our lives and that when we're gone, our children will continue to enjoy them.
Still no regrets 12 years later
We have only used these pans to cook since purchasing them in 2012 and they show no sign of wearing out. We’ve used them on electric and gas stoves — everything cooks nicely. We deglaze with vinegar or whatever is acidic from the meal and throw them in the dishwasher. The DW’s not so great for the copper’s look but there’s been no effect on the performance. Occasionally we hit them with something like Bon Ami to polish them up but otherwise they are treated like the workhorses they are. Love live love them!!
