This is a very nicely designed paring knife.

It's one piece of steel - blade, bolster and full tang. Comfortable handle. Excellent steel material and a flat grind. Classic blade shape.Since I just the got knife I haven't needed to sharpen it yet but the flat grind should make sharpening easy.

Great ergonomics, not particularly sharp out of the box

I really wanted to be able to give this knife a 5 star review. The packaging was really nice. The branding was clever. The knife looked good. It had a couple minor fit-and-finish issues, but they weren't big.Unfortunately, the big problem with this knife was that it just wasn't sharp out of the box and it was hard to get it acceptably sharp.I cook 5-10 hours per week in a home kitchen. My most of my knifes are from a very popular Swiss brand of stamped knives (you can probably guess which one), but I also have a few forged Japanese knives and miscellaneous knives. My baseline is that all of my knives except for things like cleavers should at least be able to push cut paper.When I received this knife, it couldn't push cut paper without tearing it. For the price of this knife, that isn't acceptable. It wasn't dull, but it wasn't near what I would expect for a 12.5 degree bevel paring knife. I did not feel any burr on the edge of the blade, but honed it and polished on a leather strop with polishing compound. It still didn't push cut paper.This knife was advertised as being ground to 12.5 degrees per side, but I ended up grinding the edge down significantly just to reach 15 degrees per side. Even after spending 45 minutes working on the edge and giving it a mirror finish so that it does push cut paper, it just doesn't feel as sharp as most of my other knives in everyday use.Considering the price of this knife, you shouldn't have to work that hard to get it to be very sharp. Competitor's knives aimed at home users in this price point generally come razor sharp out of the box, and at this price it is expected that when the marketing material says it comes with a 12.5 degree "razor sharp" edge that it will be that sharp.Besides sharpness, there are a few other things to note about this knife.The ergonomics are fantastic. I've only used it for a little while, but even the first time I picked it up, the knife felt like an extension of my hand. That part of the design of the knife is nothing short of stellar.The fit and finish are ok. The non-cutting edges of the knife aren't uncomfortably sharp, but where the handle scales meet the bolster isn't perfectly smooth. There is no gap, but the bolster is just slightly thicker than the scales. The same is true of the rivets.I'd give this knife 3.5/5 overall. Maybe I just got a bad copy, but the sharpness out of the box was just not what I would expect.
